Students who are dual enrolled in the Culinary Arts and Science Program have access to facilities at both the Midwest Culinary Institute and the College of Applied Science.

Facilities at the Midwest Culinary Institute

The new facilities of the Midwest Culinary Institute feature state-of-the-art culinary and instructional capabilities including:

  • Twelve instructional kitchens, which feature individual work spaces, refrigerators and food storage for each student, laptop computer docking ports and cameras at cooking demonstration areas that project on pull down screens;
  • An international kitchen featuring woks, pasta cookers, and other cooking equipment;
  • Two climate controlled rooms designed to teach students fish and meat butchery;
  • Two garde manger kitchens for teaching cold food preparation - one kitchen features an ice carving station;
  • A pastry kitchen equipped with state-of-the-art ovens and a bakery laboratory;
  • A 200 seat demonstration amphitheater with full studio production capabilities (currently this is the filming location of the TV show, "The Dish.").
  • A 90 seat restaurant staffed by Culinary students and facuity.

Facilities at the College of Applied Science

The facilities of the chemical technology department are primarily located in the Science Building of the College of Applied Science Campus. The department has a freshman laboratory, an organic chemistry laboratory, a biochemistry laboratory as well as two analytical instrumentation laboratories. Some major research grade instrumentation includes:

  • GOW-MAC Gas chromatographs (4) with Thermal Conductivity Detectors
  • Leeman Labs Inductively Coupled Plasma Atomic Emission Spectrometer
  • Perkin Elmer Atomic Absorption Spectrophotometer
  • BIORAD Capillary Electrophoresis System
  • HP Gas Chromatograph-Mass Spectrometer (Quadrupole)
  • Varian Gas Chromatograph-Mass Spectrometer (Ion Trap; EI, CI capability)
  • Ultrviolet, visible, infrared, and Luminesence spectrometers
  • DNA Analyzer
  • Polarizing Microscopes (3) with Camera attachment
  • Ultracentrifuges
  • Electroanalytical and coulometric equipment
  • Liquid Chromatographs with UV, Diode array and Refractive Index detectors

In addition, a study area is also available for students. The room is equipped with several computers, conference table, scanner, and a copier.
