'Forks Over Knives' Star Speaks at UC About Links Between Nutrition, Cancer
T. Colin Campbell, PhD, author of the best-selling book The China Study and star in the 2011 American documentary "Forks Over Knives, will be presenting, "Nutrition: Its Health Effect Is Far More Than Generally Known, during Hematology Oncology Grand Rounds from 8 to 9 a.m. Friday, March 28, in Rieveschl Auditorium, Vontz Center for Molecular Studies.
Jacob Gould Schurman Professor Emeritus in the division of nutritional sciences at Cornell University, Campbell is known for his advocacy of a low-fat, whole foods, vegan (plant-based) diet. In addition to his book, which he co-authored with his son, he has also authored over 300 research papers on the subject as well as the book Whole, which came out in 2013.
Campbell was one of the lead scientists of the China-OxfordCornell study on diet and disease, set up in 1983 by Cornell University, the University of Oxford and the Chinese Academy of Preventive Medicine to explore the relationship between nutrition and cancer, heart and metabolic diseases.
"Forks Over Knives, which was described as "a film that could save your life, by film critic Roger Ebert, examines the claim that "diseases of affluence" that afflict society can be controlled or reversed by rejecting animal-based and processed foods. The major storyline in the film traces the journeys of Campbell and Caldwell Esselstyn, MD, a surgeon, who also supports this claim.
